Both of them together..

Hello everyone, I am so sorry I was not able to post last week, because not only did I have only one day off, but also we had no electricity for a while. Anyway in this week’s post I am going to tell you all. So my last week in Thoko was pretty uneventful, my pastry chef was back from his vacation so the work was split between the two of us, which made it so much easier, we had time for him to show me a lot of the recipes once more, and teach me to do them perfectly. Right before service, and in the beginning of service however the chef was developing a new dessert, so I was very happy that I was able to handle the stuff alone, and also that he trusted me enough and was so calm. The last day we were all asked to stay for the rest of our internship in Thoko, but we kindly explained that we cannot miss an opportunity like M.B. We said our goodbyes and thanked them, because in Thoko we truly were allowed to be responsible for a lot more.

Next week began the work in M.B again… We were called on Monday to move all the equipment back to the kitchen, and to do basic mise en place. It was very fun everyone had missed each other and the day went really fast. I found out that as I suspected I was moved to pastry.

It is pretty different from the other stations, not only the cooking itself but also there is a different rhythm, different organization that I am not use to. Every day the chef de partie changes our tasks so everyone is able to see everything and “circle” the recipes. Although I am very happy to tell you that I am now responsible for the lemons. I bet that doesn’t make much sense so let me explain… We have this dessert called “Lemon” it is basically a lemon made from white chocolate, lemon cream and lemon ice cream plus a Matcha tea leaf. The making of it is by using molds and playing a lot with tempered chocolate … This week I made them by myself for the first time and the result was not perfect and a lot of them broke, but the sous chef was pretty happy and told me not worry and that I would get there very soon. On my off days I just spend the time relaxing and going around the island.
