Hello everyone, I hope all is okay. The past week for me has been very interesting. My friend Maria came in the kitchen and started to work with us. The chef told me that she would take my place at the meat section and I would be moved to starters…. This of course made me very happy because starters is the section I wanted to be at from the beginning, but after the initial excitement came the panic of the completely different environment I will have to be in. Anyway I didn’t have much time to spend thinking about that because for the two days that Maria worked in the kitchen I had to be with her and explain her everything how I do it, why I do it like that and so on. During service I had to tell what to lite for which of all the flying in orders were our concerns. Also in meat section because there is actual cooking included and everything needs to be hot when going out to the guests, you have to listen to your chef de partie and track his moves so you know when you can prepare the plate and all to be left is to put the meat… Of course in the beginning Maria was confused and scared didn’t know what to do and was not able to hear the orders in the different language, but gradually she is getting there. Anyway it’s not only me that is explaining to her, the chef de partie and his assistant took her under their wings and try and explain to her as much as they can. I will miss meat section a lot and it will always be the closest to my heart since all the services up until now I was there. Now in our off days me and Maria are just talking and talking about the kitchen sharing our concerns and impressions, and just having a good time and enjoying the island.
