The alone week

Hello everyone, The past week has been let’s say interesting…. As I told you it was the week I was alone in pastry for the mise en place part and the service, of course I had a person I could turn to and ask for questions but for the most part it was all me. So in the pastry recipe book there is also a list with each component needed so every time after service I had to go through this list and check if I have each item, and if I don’t I had to write it on the white board as mise en place for the next day. Some days the work seemed to never finish, and other days I had just enough time to do it all. In pastry I also had to prepare the bread during service, so that meant in between doing desserts I had to cut a lot of bread. The last day of the week before service the small freezer, that I use for the ice creams broke so I open it, and most of them are melted…. Which was so much fun… after that during service the ventilation was not working properly so the temperature got to 27 and all the mousses and ice creams were melting while I was putting them in the plate, the waiters were coming back with the dishes refusing to give them to the customers… It was very educational how in this career at moments, all the odds can be against you, and you can do nothing else but just keep going. At the end we warned the waiters which desserts were impossible to serve and what they can offer to the customers. It all ended well. The next day we had the event for 200 people, which went very smooth and uneventful. For us it was not a big shock because of our background experience in school with an event for 800 people.

During the off day me and Maria did some amazing exploring, by going to the national volcano park .

And an amazing beach near to the capital.
