First week in Thoko

Hello everyone, Well this was my first week in the new restaurant and it has been completely and utterly different than M.B. We have so much less work and it is much easier to do than the one in M.B, which of course is not good because if it is easy for us it means we are not really learning or growing. Anyhow it is relaxing to have more time for ourselves and not to be always on the run. My first week in Thoko I was at the fish station, which is responsible for all the fish, (cleaning and filleting), garnishes, purees, sauces, hot part of starters, and some parts of the meats during service. As I count them down it seems like a lot but it really isn’t and during the mise en place things are pretty calm and there is time for all the things. I am doing potato puree again the good thing is they are doing it almost the same way like in M.B. So it was a good week I was also plating with the sous chef. During our off days me and Maria decided to also rent a car so we can have the freedom to go around the island.

Our first adventure was to go to a really cool wild beach and just spend the day there.
