Just a week..

Hello everyone, Well this week has been very interesting living life in the starters section…. It was not an extremely busy week, they told us that the month of may is usually not so busy, and now we can see it. One of the nights we had only 6 guests which meant cleaning most of the time of the mise en place and then doing the stuff a la minute. I had to do one cream a la minute which was not very easy and sadly I did not do it perfectly. It is the Galanga cream, and let me tell you how we do it. First I have to micro plane the Galanga root, lemon zest, then to squeeze lemon and lime juice, add also oyster stock and fumet plus salt and pepper all that we put through the termomix and after that trough a civ. When it has gone through the civ we start to mix by Bamix adding emulsification cream, thyme oil and xantana, in this order and the oil is to be added slowly like you would do making mayonnaise. And that is it you have the Galanga cream the color has to be creamy white and the texture has to allow the cream to hold itself on a flat surface. We use it in the apperitive plate together with muscle and flower decoration. [if !supportLineBreakNewLine]

And the rest of the week we just spend relaxing and walking around.
