The calm week
Hello everyone, Well it has been another week in this amazing place. This week was surprisingly not so heavy because trough out the whole we had only around 30 reservations per day. Which was good because it gave us the chance to have time to ask more questions and write down everything without having to worry about a lot of work. Everyone was much calmer and they were explaining more and even my chef de partie was letting me do different stuff than I usually do and teaching me the little secrets about them. Remember in the beginning of my blog I told you that during service one of my main tasks is to do fry a part of the appetizer called Buñoelo. Well this week I was also taught how to actually make it and it is a very interesting recipe. It is made out of cured fish cod, potatoes, parsley, garlic and pinouts. With very simple ingredients you get an amazing taste. The potatoes and the fish are cooked and then put in the termomix with the rest (besides the pinouts) of the ingredients mixed until smooth. After that we use a piping bag and pipe them into candy like molds by doing to layers. One layer, then 2-3 pinouts, and then again a layer of the mixture. Then we freeze them and after the roll them in flour and Temoura and fry them until the so called golden brown state. There are more recipes I learned but I will share them with you when I have mastered them a little bi more This week was also full of beach exploring and enjoying ourselves and since I am not able to take photos in the kitchen I will share some pictures from our fun times outside of the kitchen.
