Another one in the can
Hello everyone, It is my off days and it is time again for me to tell you about my past week in the amazing Tenerife. In my last post I told you about that I was moved to another station… well after a week of work I
have to say that is just completely different I can’t even say if it is better or worse it is just different. The whole process is completely in contrast with the previous station I was at. Here I do a lot more of actual cooking and not just cutting and preparing stuff. And if I am cutting it is more precise cuts that take more time and skills to do. Every day I have to start with making potato puree that we use for the plating of one of the dishes. For now, it is taking me more time than it should be taking me but I am trying to improve every day. The thing is that to get the perfect smoothness I have to get it through a flour civ and it takes a lot of time and once it gets cold it is even worse because all the butter that I put inside solidifies so yeah… in general the stuff I do are the things I have always dreamed of doing like different sauces and purees from oranges, lemon we do false truffles from foie gras and pigeon liver, that we vitamix and put into molds especially designed with the shape of a real truffles and we freeze them and after for service we put them on the pigeon plate. I love it, the creativity and the hard work we put into something that would be gone just 10 minutes after we send it to service. Of course on our off day we don’t only write in the blog but we also go to the beach and just the calmness of the ocean.
