The week all hell went loose...

Well this week was adventures, of course it was all stocks bases and other stuff like that, but while I was doing the Calamari stock things went wrong. So when you are making this type of stock you first saute the vegetables and the calamari and after you add the liquid in the form of Fumet then you let it summer for as long as it needs you take it off the heat and we personally leave it over the night and the next day we do the clearing of it. Clearing of stock is done by a simple clarification mixture, which we do with simple egg whites. So you wisk the egg whites until they are close to their snow state and you mix them into the ready stock then you put on the heat and keep on mixing so the egg whites can go all around the stock and take all of the messy stuff out at the end you have to stop wisking so the egg whites rise to the top and all the bad stuff rises with them and under you have clear stock.... My mistake was that I didn't know when to stop wisking and I wisked in the bad stuff with the stock which of course messed it up and we ended with a cloudy stock that was not got to use. Next day we had to clarify again and again which led to losing a lot of stock ... Anyway they were just a little bit pissed off but understood that it was my first time and forgave me pretty quickly. Next week we have a double amount of calamari coming around 40 kilos so we can do it again I hope I get it right this time. Everything else is going normal we moved into our new apartment and it is amazing. The hotel with all the luxury is amazing but you are technically a prisoner there separated from a
ll social contact and fun places to attend so now we are living in San Juan, a small village very close to the restaurant. It is peaceful and cozy our flat is close to the ocean which is always good. Today is a day off which means more and more exploring and most importantly I have to buy goggles so I can dive and explore Tenerife under water.
